Hey! I’m Laura! I am, as you may have gleaned already, the railroad chef. What does that mean, exactly? I’m glad you asked. Well, first things first, I have just about the coolest job imaginable. I travel the western half of the country cooking aboard the office cars of one of America’s biggest railroads. I provide meals for everyone on board, from executives, to marketing and government stakeholders, to invited guests, to railroad staff. It’s great, and here’s why: every mile I spend on the rails, I get to test myself creatively– combining my love of a century-plus of railroad culinary history, with the food I was raised on growing up in my small Midwestern hometown. The results, when I remember to take a photo of them, are memorable- and nobody leaves my table hungry!
